Spicy or mild?

Meaty or vegan?

Creamy or tomatoey?

Well this recipe is for a spicy but sweet vegan tomatoey curry, but you can make it meaty if you want, sorry, no creamy option today 😕

Serves 4

Ingredients:

2 tsp oil

2 cups of red lentils, rinsed

1 large brown onion, sliced

2 young carrots sliced

2 cloves of garlic or 2 tsp of garlic paste

2cm ginger grated or a tsp of paste

2 tsp Garam Masala powder

2 tsp chilli flakes

1 tin of tomatoes

1 tbsp tomato purée

1 stock cube (vegan)

4 pineapple rings chopped

1/2 head of cauliflower cut into florets and steamed

8 Padron Peppers

A cup of water

Method

Heat the oil in a large pan, I use a wok, fry the onions until they are golden.

Add the carrots

Add the garlic and ginger, stir and allow to cook for a couple of minutes

Add the chilli flakes and Garam Masala

Pour in the rinsed and drained lentils

Stir in the tomatoes, stock cube and add the purée and the water,

Allow the lentils to cook until soft

Add the cooked cauliflower and pineapple and stir well

Finally, add the peppers and allow to cook for another 5 minutes.

Check the seasoning and serve with rice, salad or jacket potato.
