Mini snack post.

After watching Nigel Slater cook his way around the Middle East I have craved Mediterranean food, in Birmingham there is a cafe called Damascena which would be my go to place but I’m over 200 miles away so I had to DIY !

So a quick and simple snack to start the day, flat bread with Za’tar, it sounds wonderfully mysterious doesn’t it?

It’s a beautiful blend of oregano, lemon, sesame seeds and olive oil, served on a flat bread of your choice.

I used 2 tbsp of dried oregano and allowed it to seep in the oil to rehydrate a little, zest of a lemon and half the juice, 1 tbsp of sesame seeds lightly toasted in a dry pan. Then mixed them together in a small bowl and drizzled over the warm bread.

Gorgeous and would go very well with this cauliflower recipe I found on the Tesco website, more wonderful Middle Eastern flavours.
