Mint and Pea Soup.

Warm and flavoursome.

A quick and easy soup for yet another chilly day, thankfully it was a little warmer today and the snow has pretty much thawed, so can we can we get on with spring now?

Ingredients

1/3 kilo of frozen peas

2 medium potatoes

1 onion

3 stems of mint

stock cube

seasoning 

water

Method

Dice the potatoes and pop into a saucepan

crumble in the stock cube

add enough water to cover and bring to the boil

Dice the onion and add to the potatoes

allow to simmer until the potatoes are cooked

Add the peas, keep a few for garnish

cook for another 3 mins to cook the peas and add the mint.

let the mix cool a little before blending, I use a stick blender like this one.

When your soup is super smooth add the last of the peas and simmer for a couple of minutes.

I also made a little cashew cream to garnish, which is a handful of raw cashew nuts boiled for 15 mins then blended with a little dairy free milk till smooth then popped on the top.
