Well, tomorrow is pancake day, I never understand why most people, in the UK, only eat them on this one day when they are so versatile, our American cousins love them big and fluffy and I love them like that too. Don’t get me wrong I can demolish a plate of thin pancakes with lemon and sugar no problem 😅

A few months ago we went to our ‘local ‘ which is a rotisserie chicken restaurant/pub and I had chicken in breadcrumbs, waffles and maple syrup with chillies. Well, this was the best food I had ever eaten, but I’m a vegan now…. so I had to recreate it!

I used the Quorn fillets which are Okay, on their own I find them a little bland, but good as a protein base.

Quorn in breadcrumbs with waffles and maple and chilli sauce.

Quorn fillets with spicy breadcrumbs pancakes and maple syrup with chilli

Serves 2


4 Quorn vegan fillets

1 cup Breadcrumbs made from stale bread or bought

1tsp garlic salt

1tsp paprika

A good grind of black pepper

1/4 cup almond milk

1/2 bottle of maple syrup (150 ml approx)

1tsp chilli flakes ( more or less depending on your taste)

1 cup plain flour

2 tbs sugar

1 tbs baking powder 

1/2 tsp salt

1 cup almond milk

1 large tsp of white wine or apple vinegar

1/2 tp vanilla ess or extract


Preheat the oven to 200′

Or just an Air-fryer

Defrost the fillets.

If like me you save old bread to make breadcrumbs, either finely grate or use a food mixer to make the crumbs. Add the seasoning, blitz till fine and pop them in a freezer bag.

Put the milk in a flat dish.

Dip the fillet in the milk then place it in the bag with the crumbs and gently shake till it’s covered. Then place on a baking tray, or in the base of your Air-Fryer, mine does not have a paddle, if yours does, I am not sure if you can remove it … if not use the oven.

Place in the oven for 15 minutes.


Pour the syrup into a pan with the chilli flakes and warm over a low heat.

To make the pancakes, mix all the dry ingredients together and then add the wet, this is the American way and it works! no more slowly adding milk to the flour.

start cooking the pancakes, in a small pan with a little oil, the pan needs to be quite hot and the pancakes will cook quickly so keep an eye on them.  Pop the cooked ones into the oven on a tray to keep warm, and when the fillets have browned you are ready to serve.

So a couple of pancakes with the fillets on top with the warm maple and chilli drizzled over the top.
