So, some of you don’t like cauliflower! What’s wrong with you? 😉
So what about onions…everyone likes onions. (Fingers crossed )
So today’s soup is a take on French Onion Soup, it is made with vegetable stock rather than beef so isn’t as meaty flavoured, but I have used vegan Worcestershire sauce ( which can be found in the FreeFrom sections in the UK supermarkets or whole food shops ) to pump it up a little.
French onion and garlic soup.
3 onions finely sliced
3 cloves of garlic finely sliced
Dairy free butter
2 tsp maple syrup
2 tsp veggie Worcestershire sauce (see above )
Veggie stock cube
Cornflour to thicken if needed.
Melt the butter in a saucepan over a low heat.
Add the onion and garlic, leave to cook until golden, this will take about 15 mins with occasional stirring but it is worth it for the caramel flavours.
Add the maple syrup and Worcestershire sauce, stir in.
Crumble the stock cube into the onion and garlic mix and add enough water to cover.
Bring to the boil, then simmer for a few minutes to allow the flavours to blend.
If you like your soup a little less watery, use a tsp of cornflour mixed with water to thicken, do remember to let it simmer for a couple of minutes to cook the flour through.
Check your seasoning, you can always add more but you can’t take it out. Stock cubes are quite salty but you may like more 😁
