So, if you have read a couple of my previous posts you will know that I have been on holiday to Cyprus, it is an amazing place to visit and I would quite happily live there, but I am also very happy in Wales so I have bought a bit of the Med to Haverfordwest this week with a Greek inspired dish.
The fruit and vegetables that are grown in the warm Mediterranean sunshine are sweeter than here, even the air has a sweet citrus smell from the fields. The villa that we stayed in had a wonderful patio style garden around it with fruit trees all on the one side, we had a couple of oranges straight from the tree, they were amazingly juicy and really tickled the tastebuds, oh when are we going back 😉
I do tend to use vine ripened tomatoes when cooking as they are closer to the taste of Greek ones, but any tomatoes will do for this recipe.

Slice of bread of your choice, I had olive bread so used that
4 ripe tomatoes
Handful of mushrooms
Olives, I used the lemon olives, I dream of these at the moment ❤
Oil, the spray oil is very good it stops you putting too much in the pan and food becoming greasy
Use a large frying pan or a couple of small ones, heat them on a high heat with a bit of oil,
Put the bread in to toast and warm through
Put the mushrooms into the pan first, they will use the oil to fry
Add the tomatoes and continue to cook until they start to breakdown
Check and turn your toast
Add the olives to warm through
You could add garlic into the mix with the tomatoes if you wish and a drizzle of balsamic vinegar at the end would add an extra zing, make the recipe yours.
Plate up and enjoy,
